Hey guys, I’m just wondering if I have a sub that handles 800-1600 watts at 8 ohms can I run a Behringer EP2500 into it in bridged mono? (the amp sends 1300W at 8 ohms in this configuration)

Not saying that you don't, but that is unusual. To have double the peak is not really heard of.
But, still, 1600 watts peak with a 1300 watt amp is fine. As long as you are not under 800 watts. You should be fine.
