That is very common with today's huge software samplers. With Kontakt I run Direct from Disc. Meaning I have all my samples loaded on a separate HD that is for streaming samples only. That helps with the memory thing a bit.
But yes, running collosus and SO as well as Kontakt will scarf up 2 gigs of ram very fast.
One suggestion is to get your track as close to what you think you need. Then send the midi/softsynth track to an audio track and shut down the software synth to free up ram.
