Working with:

Gale Monitor Speakers
Eltax Amp
XENYX 1204 Mixer + UCA200 Soundcard
Microphone
Boss GT-6 Guitar Effects Pedal
Midi Keyboard
Cubase SX3

I would like to be able to have different equipment plugged into the Mixer. e.g. guitar (stereo), piano (stereo) a mic etc.. But be able to record the guitar first which would record to tracks 1 and 2 in cubase. Then be able to play the piano to record to tracks 3 and 4 in cubase. then do some vocals and set that to record on track 5.

Would it be possible to do this and if so what would I need to connect where and with what leads?

Thanks in advance.

The outs from the mixer go to your amp and then speakers...thats the output in a nutshell.

I can't find much good info about that audio interface, the only stuff I can find are forum threads from people not getting it working...thats not a good sign...

Not knowing anything about it I'll have to not say anything there...but offer generic advice.

Plug the guitar effects thing into a stereo pair of inputs on the mixer, run the mic into the mixer and run the mixer into the sound device.

The MIDI keyboard would have to be plugged into a MIDI input somewhere on your PC or sound device.
