Simultaneous recording on firewire recorder

Hey Hey
The answers are running so fast so I can't help asking more questions!
This time it's really basic, but I just didn't find the information nowhere.
Is simultaneous recording a function of the recorder (computer based recorder, firewire connected), or the program on the computer?
It sound kind of stupid as You'd think it would be a matter of the recorder, but I can't find how many tracks I could record simultaneously on such equipment. (Quite important information for me as I want to record piano and acoustic instrument).

It really could be a function of either...more specific info on your gear and recording software would be helpful!

Mainly the Tascam FW 1082, maybe the motu 828mkII.
Ah and the lexicon Omega.

Software is mainly the cubase and Iam thinking of purchasing the pro tools...
