I am not familiar with those SoundBlaster cards myself. However, the key to recording onto multiple track, regardless of the sound card used is to setup each track in Cubase to listen to a different in from the card. To get stereo ins to record to two separate tracks you may have to pan the sound hard left and hard right.
Then in the track properties, make sure two track are listening for input(or, line in) 1 and 2 and pan those track hard left and hard right. and two others listening for aux 1 and 2 and pan those hard as well.
If they are not simple little stereo ins, and are actually mono input, then ignore the panning advice, as it won't come into play. But the last SB I looked at still had those silly little 1/8" stereo plugs except in the "Live Drive".
