I don't use Acid, so I had to look up some images. Are you talking about the Pitch/Pan/Modulation/Aftertouch/Expression sliders?
Pitch does just what a pitch wheel on your controller keyboard would do, bend or change the pitch of the note.
Pan, adjusts where the sound sits in the soundscape from left to right.
Modulation will modulate the sound. E.G. you could say, map it to an LFO on a synth, and use it to change the way the LFO modulates the sound. The Mod wheel on a midi controller or synth would adjust this too.
Aftertouch will affect aftertouch parameters, if the instrument supports it. Aftertouch is a CC trigger on midi keyboards/instruments that support it. Basically, when you press a key on the controller, and then press it down further and the sound changes, that's aftertouch. Often it's mapped to a filter on a synth, or other parameters that change the sound in real time.
Expression would be kinda like using an expression pedal or sustain pedal. It can be used to adjust an envelope's release or sustain times.
Often times, depending on the synth, those sliders can be mapped to different things.
