Tracking Questions

I have a couple of questions about tracking for you guys. First of all, Is it best to record everything mono or are there some instruments that are fine to track in stereo? Also, Since vocals are usually right down the center of the mix, is it okay to put other instruments in the center as well or would that interfere with vocals?

i always record mono tracks...that way if i want to 'stereoize a track' i can pan things accordingly....whereas if i record say two mics in an XY, as a stereo track, what if i wanna bring each mic 'in' further? if ya adjust the pan on a stereo track it just shifts both tracks to the left or to the right...for me it's all about control.

percussive instruments like drums work well panned dead center, as do bass instruments. they sit in a whole different frequency range than vocals.
