Stereo v Mono

When i record any audio it only does so in Mono. This happens becuase i connect to my soundcard (Delta 1010LT) from the FX Send of the mixer using a mono chord (It has one ring on it so i assume that's mono). 1/4 inch to RCA

What im needing to do in Cubase is 'Flip the track to Stereo'.

Is this a silly way of doing things? Should i get a chord that goes to the left and right inputs of the soundcard instead?

And does everything need to be in stereo - for example if i have a guitar that i want panned left anyway?

Why, then you just have side by side stereo tracks of the same thing, it's still mono...you take all those mono tracks and pan them around the stereo field, then export as a stereo track. Unless the instrument you are recording is using a stereo effect, you should record it in mono and leave it that way.
