Problems with final mix!

In order to record, I am using the 'save live output to disk' function on Reaper. The final file I create works well when I play it back in Reaper as a WAV or MP3. But, if I listen to it in Itunes or Windows media, all the dynamics are evened out (the quiet parts are louder and the louder quieter). I cant figure out why this is happening and how to keep the quality of the original piece. I have also tried just 'rendering' the piece. I have recorded it at several different bit depths, ranging from 64 to 8. Any help would be appreciated.

not sure on Reaper, someone else here will though but,

with Cubase, i have to make sure "stereo out" is selected for the output and not "stereo split" or anything like that. and i have to make sure that "real time export" is selected which is the effects and such.

sounds like you could be missing those maybe?
If you have the option to choose something like that and you havent, then your levels could be all over the place as you mentioned.

it will be exporting everything bar fx

You may have the volume leveling enabled on iTunes and WMP. That would be my first thought.
