Hooking up Technics to Digi Rack 002 & Pro Tools LE 7

Hello & Happy New Year.
I am trying to hook up my Technics turntables to my Digi Rack 002 so I can record a mix cd in Pro Tools LE 7. I have a Dual-Processor Intel Mac (from 2006) running OSX 10.4 with 4G of RAM. I have "Record Out" RCA jacks on the back of my Vestax PCV 175 mixer, but I am unsure of which jacks to connect to on the back of the Digi Rack. Via an RCA to 1/4" cable, I have tried connecting to both the Analog Inputs 5-8 and the Line Inputs 1-4. On both I get a signal when I cue the record function - however, it is only on one side. Also, I seem to be getting a stronger signal in the line inputs than the Analog. Should I be using the Alt Source Inputs 7-8 instead?
As for the signal only coming in on one channel, does it have to do with Mono vs. Stereo recording?

Yeah, each input is one mono track. To record stereo you must tell the track to record stereo (Line 1&2). In my DAW when I select inputs I have the option of (stereo pairs) S1 through S4 or (seperate mono) M1 through M8.
