Back into the DAW is going to be the same data that would go into the ML9600 (assuming the Apogee is doing the conversion).

Yep - Assuming you're using the TAC for summing (10 channels, basically at unity except for hard-panning stereo groups), you'd take the board's output into the AD and right into another stereo input channel in the DAW.

being that the delta 1010 are mono.. would that be inserted into 2 inputs from the apogee( rosetta 200) back into the delta correct?

Everything is mono. I'm just "generalizing" a stereo pair.

That said - And I could be wrong here - Doesn't the Delta have a S/PDIF input or something? I was figuring going into the Apogee AD into the Delta's S/PDIF (bypassing the Delta's AD)...

It's a digital connection. It's really the only option.

If you don't plug the Apogee AD converter into the Delta via SPDIF, the Apogee AD won't AD.

Think of it this way: your analog data is only going to be sampled as digital information once. Once it is sampled as digital information, the data must travel through SPDIF. So if you want to use the Apogee you must use SPDIF.

Also: SPDIF looks like a standard RCA connection but is not, you need a cable that specifically says "Digital coaxial cable". Got mine at Radio Shack.
