software that can do the same as the akai mpc but not the akai price

I am building a home studio in my home. I have a I mac and a keyboard and a sound module. I am producing music of r&b,hip hop, neo-soul and gospel.I am looking to buy logic or another software what would be a good one to start with.
2nd I want buy a akai mpc 2500 but i was told that their are several softwares out there that can do the same with less of a price. I have been looking at Ik multimedia bundle package as well as the Native Instruments packages, also Reason
I want to be able to make samples with old break beat record as well as things in around me like (human voices). What software would be good for this.
3rd what would be a good sound software, seeing both packages I have stated above have them what would be the better one? (( if you can give me the top of the line to the least top of the line it would be helpful to find a medium ,,

Cakewalk Project 5 is a sequence, beat making sort of app like that, and it rocks.
